Jerusalem Artichoke—I spotted on my walk yesterday.
The Jerusalem artichoke is called sunroot, sunchoke, wild sunflower, or earth apple and is of sunflower native to North America. It is cultivated as root vegetable by native Americans. The tubers can be eaten raw, cooked, or pickled. They have a sweet flavor similar to an artichoke, but the two are not related. An indigenous woman, in modern-day North Dakota, prepared this dish for Lewis and Clark. 💛💛
