Thursday

Laura brought my breakfast on her way to work~~baked oatmeal. It’s like having a brownie with no flour or sugar but loads of protein!  There’s lots of recipes. I use a cup of whole oats, big tablespoon of cocoa, big spoon of peanut butter, an egg, 1/4 cup of real maple syrup fill the rest of the measuring cup with liquid (real milk, buttermilk, almond milk or just water), teaspoon of baking power, teaspoon vanilla, and if you want add a few chopped nuts or chocolate chips. It’s baked at 350 degrees for 30 minutes. You can find a real recipe easy by searching. I’m not good at following a recipe. It’ll stick if you don’t grease the baking dish. It’s best served warm.

It’s cooler here but I’m still in a good mood. I get this way in the spring. It was 40 last night. Life is good when you look for the positive things happening and don’t watch the news. Mostly, I am thankful I can walk, not miles like I once did but I can make it doing my everyday chores.
